Tsurumi Takashi Western Confectionery Class

Starting in 2023, Tsurumi Takashi will be teaching us how to make Western sweets for each season.


Tsurumi's sweets are dignified and beautiful, yet have a touch of playfulness and subtle sexiness.


I always thought that was just like him.


In the classroom, we will learn about traditional European sweets, including those from France.


We will introduce a combination of seasonal ingredients from Kumamoto.



In January we will be making "Galette des Rois".


Galette des Rois is a beloved French dessert for the Christian holiday of Epiphany.


Inside the pie crust is almond cream and a small ceramic doll called a "fève".

It is baked after beautiful cuts are made.



Place the crown on the table.


If you find a doll inside the galette when you cut it, you will become king for that day.



This time, each person will make one large galette and one small galette.


Let's assemble and decorate each part together.


The small galettes are great as souvenirs, and the larger ones can be cut into pieces and enjoyed.


Who will be king that day?



You will also enjoy another dessert (recipe included).



*We will need to keep the room temperature low to prevent the pie crust from dripping, so we would appreciate it if you would dress warmly.


* What to bring: Apron, hand towel

He has produced menus for "Café Lisette" in Tokyo, "FLAVÉDO" in Kumamoto, and "TEATON" in Ishikawa.

She runs a confectionery school called "Tsurumi Confectionery" in Tokyo.
